If you are wondering who that some bunny is that loves you, it's me, of course!  So, I'm giving you links to some fabulous Easter printables that will make your Easter treats or Easter party extra special! 

Easter is quickly approaching and I must admit that it has snuck up on me.  It's been a busy couple of months -- I've styled, hosted or created custom paper goods for over eleven parties in the last two months.  I feel like such a lucky girl to be able to be a small part of each of those special events.  I love my job!

This vintage, pastel Easter Brunch is from my friend, Kristi over at Saucy Pants.  I met sweet Kristi at the Amber Housley Inspired Event, earlier this month.  Saucy Pants is a great site, where you can store and sort all your favorite recipes and also find lots of fabulous cooking and entertaining inspiration.  Kristi created this beautiful Easter Brunch, just in time for the start of Spring.

As told by Kristi: "I think Easter calls for a light springy look. I wanted to capture that with a twist of vintage for the entire look but especially for the dessert buffet.  To accomplish this, I made sure to use pastel colors with a mostly white backdrop … and then I threw in the vintage trinkets from there.  I used my {Classic} Easter/Spring Party Printable Collection to create the color palette for the table, and then the desserts I chose took the color up one more notch. From the macarons to the white chocolate popcorn to the coconut cake, these desserts are as delicious as they are easy on the eyes! Trust me when I tell you that! Try them sometime to see for yourself, but be careful … they are addicting!"

{Real Party} & {New to the Shop} -- Little Rockstar Baby Shower

I recently co-hosted a baby shower for one of my sweet cousins, Shelby.  Shelby is pregnant with her first child -- a baby boy.  When we started discussing themes, I knew a "Little Rockstar" theme would be perfect because the momma-to-be just happens to be the lead singer in a band! 

Shelby's band is more Southern Rock, than hard rock. The band compares their music to "an afternoon thunderstorm sweeping through the pine trees of the Georgia hills."  Shelby also loves rainbow colors, which matches her bright, colorful personality.  So, when I started designing the invitation and paper goods for the party, I combined a rustic, Southern feel with rainbow colors. 















Party Details:
Shelby's aunt, Beverly, hosted the party at her lovely home.  We served Chocolate Cupcakes with Peanut Butter Buttercream, Chai Cupcakes with Chai Buttercream (a request from the momma-to-be), Fruit Platter, Lemon Sugar Cookies and Punch.  Beautiful white daisies, a sweet Southern favorite, decorated the food table.  Guests completed a "Wishes for the Little Rockstar" card for the baby boy.  As a favor, guests took home dark chocolate stars, which could be stirred in coffee or hot cocoa.

Rainbow Treats for St. Patrick's Day

Since St. Patrick's Day is on Saturday this year, I wanted to make a quick, easy treat to celebrate.  However, my son's 6th birthday party is  Friday and we are attending a birthday luncheon on Sunday, so I wanted to find something over than CAKE! 

I love each of these simple, no bake ideas.  I did a fruit rainbow for an afternoon snack last year on St. Patrick's Day.  It only took about 10 minutes and the kids thought I was cooler than a pot o' gold!  And, what about those rainbow chicken tortillas -- pretty clever!

Last Friday, several tornadoes tore through parts of Kentucky, Illinois, Indiana, Alabama and Tennessee.  The devasation was unimaginable. 

Mirabelle Creations was founded, in part, as a way to make a small difference.  At least 50% of the profits from my Etsy Shop are donated to charitable causes.  Each quarter, I choose a charity for the donations.  This quarter, I've chosen to donate to the tornado relief efforts through the Red Cross.  Through the rest of March and April, I will continue to donate to the Red Cross.  So, THANK YOU to each of you for ordering from Mirabelle Creations and allowing this donation to be made.

If you've been poking around this site for long, you've probably noticed I'm a kind of a girly-girl.  I've never been camping (and only plan to if I can stay in a hotel), I love all shades of pink, I took up tennis because I thought tennis skirts were cute and my favorite movie characters are Elle Woods and Margot Tennebaum.  I'm not a huge sports fan, except for one time of the year -- MARCH MADNESS!! 

In the Bluegrass State, basketball is king!  Growing up in Lexington, you either cheer for the University of Kentucky or you are politely asked to leave, bless your heart.  The craziness begins this week with the SEC Tournament.  If you need me for anything, you can find me in front of the television watching as many March Madness games as possible.

My excitement is already starting to build, so I did a little test run of some Blue Velvet Cupcakes, yesterday.  I plan on making these little treats for a SEC viewing party this weekend.  Don't you love this blue color?



The Wildcat paw on top was made by cutting a cupcake in layers, then using an icing tip to cut it out. 






I couldn't resist making a #1, as a cupcake topper, with the season the Cats have had!



The recipe for these UK inspired cupcakes comes from one of my favorite dessert bloggers, Sprinkle Bakes.  You can find the recipe, HERE.  The secret to creating this lovely shade of blue?  Violet food coloring gel.  Sprinkle Bakes gives exact directions on how to get this great color.  Not to mention that they taste pretty yummy, too.  Just like my grandmother's red velvet cake, except it's in Kentucky Blue!

How LUCKY am I to be able to design an invitation for such a sweet 7th birthday?  Libby turns 7 this year right around St. Patrick's Day.  So, she decided to have a Lucky 7 theme birthday party.  Her mom contacted me to design the invitation and a few other items for the party.  Since Libby is a little bit girly and little bit preppy, she and her mom requested that I add some pretty pink to the typical St. Paddy's Day green.

And, this birthday girl is not only lucky, but she's very generous, too.  In lieu of a gift, guests were asked to bring an item to be donated to a local animal shelter!

This weekend, I had the pleasure of attending the Amber Housley Inspired Event.  It was an inpiring day, filled with great speakers.  Amber Housley, Courtney from Pizzazzerie, Kelle from Ann Kelle, Sara from Sara E Rose Photography and Jessica from The Budget Savvy Bride all spoke at the workshop.  Each of the ladies gave practical and creative information on how to grow a small business.  Whether you are starting a new small business or a seasoned businesswoman, I would highly recommend this great workshop.  If you want to vote on where the next workshop will be located, you can do so HERE.  

In addition, several other party gals attended the workshop.  I had a great time getting to know Pizzazzerie,  The Party Press Blog, Saucy Pants, Lucky Penny Events, and Perfectly Posh {A Boutique of Sweets and Soirees}.  In my rush to pack for the Workshop, I forgot to include my camera.  Several of the sweet ladies agreed to share their pictures with me and emailed me the pictures before I even got home.  All of the ladies I met exuded this warm, generous spirit.  What a great group of women!

{Recipes} - Lemon Lime Marshmallows

I admit that I was a little intimidated about making homemade marshmallows.  Several online posts stated that they were difficult and a sticky mess.  But, I'm glad that I tried.  They were certainly sticky, but they were much easier than expected.  If you like the taste of fresh lime juice, you are going to love these. 


Lemon Lime Marshmallows (adapted from the the Food Network

Ingredients 
  • 1/4 cup confectioners' sugar
  • 2 (1/4-ounce) envelopes unflavored gelatin (about 2 tablespoons)
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup freshly squeezed lime juice 
  • 1 3/4 cups sugar
  • 3/4 cup light corn syrup
  • 1/2 cup cool water
  • 1/4 teaspoon salt
  • 1 tablespoon grated lime zest
  • yellow and green food coloring
Spray a 9x9 dish with spray cooking oil and set aside. Sprinkle a small amount of confectioners' sugar in dish, covering bottom and sides. 

Combine the gelatin, lemon juice and lime juice.  Set aside. On the stove, over medium heat, add sugar, corn syrup, water, salt, and lime zest to a small pan. Stir until the sugar dissolves. Increase the heat to high.  Continue cooking the mixture, without stirring, until a candy thermometer inserted into the syrup reads 250 degrees F. This will take about 10-15 minutes and the mix will be boiling.

Pour the gelatin and lime juice mixture in the bowl of an electric mixer.  Mix on low speed.  After the syrup reaches 250 degrees, slowly pour it into the bowl of the electric mixer to combine with the gelatin. Mix on low speed until the syrup and gelatin mixture are combined.  Increase the speed of the mixer until it is on maximum. Beat the mixture until it becomes white in color and nearly triples in volume, about 15 minutes. Add the food coloring (to your desired color) to the mixture at this point and mix for one more minute.

Coat a rubber spatula with cooking spray.  Using the spatula, spread the marshmallow mixture into the prepared dish.  Lightly spray the cooking oil on your hand.  Press the marshmallow into the corners of the pan. Sprinkle with confectioners sugar and allow the marshmallow to set, uncovered, overnight.

Using a knife, run the knife around the edges of the dish.  Turn the dish over and release the marshmallows from the dish onto wax paper, covered with confectioners sugar. Using a knife, covered with confectioners sugar, cut the marshmallows into 2 inch squares.  Roll the cut marshmallows in the confectioners sugar, until all sides are covered.
